What are Specialty Powders?

Specialty powdered products are often referred to as “Pantry” products. This really means that the items are powdered forms of things the consumer or food service groups would typically use as liquids. These convenient powdered forms offer ease of storage, shipping and handling. Many items are 3 – 4 times concentrates of the standard liquid versions. With only a few exceptions, all products are kosher or kosher dairy.

Specialty Powdered Products and Applications

The “Pantry” products include cayenne pepper sauce, Dijon salad mustard sauce, yellow salad mustard, Worcestershire sauce, buffalo wing sauce, bar-b-que sauces, horseradish sauce, jalapeno sauce, honey and molasses. In the spray dried form, they offer a concentration of flavours and unique opportunities for flavours in dry mixes or in topical applications.

Ohly’s products are classified into five distinct product groups and branded under the name of ProDry.

Natural Sweeteners
Included here are dried honey and molasses containing a range of honey or molasses solids from 32% – 75%.

Vinegar Powders
Offered in this grouping are a wide range of vinegar flavors including, Apple Cider, Balsamic, Malt, Red Wine, Rice, and White distilled. Most are available in standard and IP versions. The total titratable acidity for this group ranges from 3 – 10%.

Condiments
This extensive group includes unique powdered products such as Bar-B-Q sauces, Cayenne Pepper Sauces, Dijon Mustard, Horseradish, Jalapeno Sauces, Salad Mustard, and Worcestershire Sauces. Many are available in standard and IP versions.

Nutritional Bases
These lipid-based powders are non-hydrogenated and trans-fat free, water dispersible (hot or cold) powders containing 50% fat and 37% dietary fiber. The lipids are High Oleic Sunflower oil or Coconut oil. They are excellent for use in low carbohydrate and nutritional applications.

Lipid Bases
At up to 73% lipid content, these products offer a very convenient form of adding high levels of non-hydrogenated, trans-fat free, water dispersible oils in a convenient powdered form. The sources of oil include Canola, High Oleic Sunflower, Medium Chain Tri-glycerides, Safflower, Soybean, and Sunflower. Depending upon the product, the oils are dried on dairy or non-dairy bases. Many are available in IP versions.
